When the temperature outside all of a sudden drops and we have to start incorporating the time needed to bundle up into our morning routine, we reach for comfort food. Warm bread, cheese, and other indulgent picks become favourites of ours – and the recipe we’re sharing today has all of the above!

The flavour powerhouse here is the Chipotle Lime Hummus. It’s full of spicy chipotle peppers and zesty lime juice, and definitely steals the show! We like to pair this smoky flavour with fresh avocado and crisp lettuce. Add some veggies and something to dip them in (like our Mediterranean dip) on the side, and you’re all set.

INSTRUCTIONS

  • Start your barbecue, and slice up all your burger toppings. We like to have everything ready in advance so that we can move quickly once the burgers are done cooking! We recommend cutting everything into thin slices so that they easily stay on the burger while you eat it – thick slices of tomato makes everything slide off the bun.

  • Cook your burger of choice according to the package directions. Here are a couple of Happy Dance Tips for cooking your burger:

    • Start with a clean grilling surface. Little pieces of food stuck to the barbecue will change the flavour of the patty.

    • Only flip your burger patty once! Flipping it constantly will make your meat dry and tough, or make your veggie patty fall apart.

    • Don’t press your burgers down while cooking, you’ll let all the delicious juices and flavour out!

  • When the burger patties are just about finished, add mozzarella to the top so that it melts. If you want to grill your bun, this is the time to add it to the barbecue as well, but keep a close eye on it so it doesn’t get too crispy or hard.

  • On the bottom bun, spread a layer of Chipotle Lime Happy Dance Hummus – don’t be shy! On top of the hummus add your lettuce, burger patty with melted cheese, avocado, then tomato. Then, we like to add one more layer of hummus here for extra flavour before placing the top half of the bun.

  • Grab a bunch of napkins, and enjoy!
